8 boneless, skinless chicken thighs, trimmed of fat
1/4 tsp salt
3 cloves garlic, minced or grated
1 Tbs chili powder
1 tsp ground cumin
1/2 tsp cinnamon
8oz can tomato sauce
1/2 cup chicken broth
2oz semisweet chocolate, coarsely chopped
2 tsp smooth peanut or almond butter
- Spray heavy skillet with cooking spray and place over medium high heat. Sprinkle chicken with salt and add to skillet. Cook, turning once, until browned, about 3 minutes per side. Transfer to plate.
- Return skillet to medium heat. Add garlic, chili powder, cumin, and cinnamon, stirring constantly until fragrant, about 30 seconds. Stir in tomato sauce, broth, chocolate, and nut butter. Bring to a simmer, stirring occasionally. Reduce heat to medium low and return chicken to skillet, along with the accumulated juices. Turn once to coat chicken and simmer until chicken is cooked through,6-7 minutes.
